This depends on your needs. Is the single machine able to take advantage of the 802.11N standard (core 2 duo intel macs)? Would you have use of the "Air Disk" features (requires an external USB hard drive)?
Currently, we have 4 machines using an airport express. They're relatively cheap, and I like the AirTunes function. Another option, if you're looking to spend the money might be the soon to be released TimeCapsule. It has an airport extreme with a "server grade" hard drive inside, and can be used with time machine to back up wirelessly.
