whenever I get the grey deleted email problem, what usually fixes it for me is going into mail > preferences > accounts > mailbox behaviors. there i usually need to uncheck and check the "move deleted messages to a separate folder" box, and maybe change the "erase deleted message when" setting.
this usually works for me. now i have no idea why i occasionally get this problem.
