I should have written Snow Leopard...

What you assert is not quite true. Apple does claim to support standards in
iCloud--CalDAV for the calendar and IMAP for mail. But, I’m starting to
disbelieve.

Although Apple has a tech note (HT4864) documenting the IMAP settings for
iCloud email, they don’t work with any IMAP client I've tried under Snow
Leopard or Linux. For example, Thunderbird returns the error "imap.mail.me.com
: server does not support RFC 5476, see CVE-2009-3555." This concerns a flaw in
TLS/SSL authentication that was first noticed in 2009 and corrected in the RFC.
Several other IMAP clients refuse to authenticate because of this.

The upgraded mail programs under Lion and iOS 5 get around this problem because
Apple doesn't use standard SSL password authentication. They've chosen to use a
proprietary method they call "Apple token." You can see this, if, in Lion Mail
you go to Mail>Preferences>Accounts>iCloud>Advanced and look at the
Authentication field.
