Harry,

Backup both of your iPhones to iTunes.

Then when you get your new one, set it up in iTunes by using your last backup.

Then with YOUR old phone, RESET it (in iTunes) and use HER last backup to 
configure it.

The phone number is a separate issue. Take both phones to the AT&T store and 
tell them what you want to do and they will set up your SIMs for you.

And, in my experience, they don't charge for it here either.
