For the iPhone and iPad do the following
>From your iPhone start typing the name of the person you would like to email.

When you see the old email address then click the arrow to the right of that 
old email and click "Delete from Recents"

This will solve the problem that you are having.

Whenever I send an email and start to type in the email address of the 
recipient a list of addresses appears. Even addresses that I have removed from 
my contacts list because they are no longer valid.

How can I clear the memory so these invalid address do not appear?
