On an old mac (how old I do not know, but mine is running Tiger),
reformat the disk to one partition

Disk Utility warns you that formatting erases everything,
but it does not unless you tell it to.

If you tell it to erase everything on a 3TB HDD
plan a trip to China while you wait.

Pro tip:
        A blinking light on your HDD does not necessarily indicate 
        that what you think is happening
             is happening,
        or even that the disk is spinning

I know there were files remaining on the HDD
because TechTools found them,
but they were invisible to me.

move to a more recent OS (mine is 10.10.1)
format three partitions - GUID
        could not format with partitions positioned A,B,C
but when I changed their order on the disk to C.B.A
        it worked like a charm.
perhaps this has something to do with files still on the HDD.


If you want to encrypt a partition,
open and erase that partition using the encryption option.


As I wandered in the wilderness, I erased and repartitioned many times,
but I think the steps above will do it.
