Yeah, I was going to say that, too. OCR is pretty much your best bet. You can reclaim the text pretty well that way, but if it has any fancy formatting your results might not adhere to the original as much as you’d like.
PDF was always supposed to be a one way format, so it never been much of an editable format. PDFPen makes a valiant effort at it, though.
