In Yosemite, I have usually been able to avoid the newer versions of Pages and
Numbers by going to a file’s Get Info, and in the "Open With" box selecting the
iWork ’09 versions of Pages and Numbers. Afterwards that file (and most similar
files) open in iWork ’09 whenever I double-click on them. I won’t lose that
ability if I upgrade to El Capitan, will I?
