Hi Jim,

Just the kind of question I like!! It is very simple to set-up multiple 
IP addresses in Mac OS X.

Go to the System Preferences and Select Network.
Click the lock button and authenticate if you are not an administrator.
 From the Show: Pop-down menu, select Active Network Ports.
Select the port that you use to connect to the network and click 
Duplicate. (Ethernet, Airport, etc.)
Name the duplicate port something so that you will be able to tell at a 
glance what it does.
Click the Apply Now button
 From the Show: Pop-down menu, select the port you just created.
Now give the new duplicate port another IP address and click Apply Now 
again.

You are set. Test out your V Host and enjoy!
