You can't use DHCP through LocalTalk but you got another problem, you can't get IP at all with the setup as it is. LocalTalk Bridge bridges AppleTalk, but not IP or any other protocol. IP over LocalTalk is known as MacIP. It is IP encapsulated in AppleTalk packets and can thus go anywhere that AppleTalk can go. To use it you need a IP to MacIP router or bridge.
