If it were me, I would install 7.5.5 and OT.

7.5.5 fixed a number of bugs in 7.5.3. And OT (even an older version) 
will open you to many more server applications, and is just newer and 
easier to work with (IMO).

You won't see any noticable speed differences between 7.5.3 and 7.5.5, or 
between Classic Networking and OT (actually, you will probably find OT to 
be faster).

Also, you might NEED to be running OT if you plan on hosting via 
AppleShare to OS 9 clients... but I don't know for sure (you do not need 
to be if you plan on being a client of an OT host however)
