If the PC can be the server, you can use DAVE:

If you want the PCs to share the Macs, that's a problem under OS 7,8,9.
In the old MS/DOS days (presumably also Windows 95) there was a product
called Appleshare/PC that allowed PCs to access Appleshare servers over
Appletalk. Not sure about sharing printers. If printers can be shared,
they'd have to be Apple printers. Epson has its own printer sharing
software that's separate from Apple's.
Believe it or not, I have one fully boxed copy of Appleshare/PC, which
hasn't been used. At the time Appleshare/PC came out, Mac networks were
mainly based on the "Localtalk", or its competitor, Phonenet. I even
have a Phonenet adapter for a PC to go with the software. I don't know
whether Appleshare/PC works over Ethernet, but I would think so.
Ethernet cards were available at least as far back as the SE/30, because
I have one. If you're interested, I'd be glad to send you the
Appleshare/PC stuff for the cost of shipping.

epson stylus pro printer and apple coulorone scanner
They all have ethernet ports and running on os9.
