I think this has changed in iOS 5.0, I just flipped some switches in Settings 
for numbers and pages. I can’t speak for unreleased apps on the desktop.

Right now third party developers aren’t supporting iCloud. yet. it’s new, and 
they’re just ramping up on the development side. More Apps will need it than 
Pages and Numbers and Keynote. :-)
