You can use Speech Recognition with MacPerl, but you'll need a PowerPC machine
to run Speech Recognition.

The MacPerl INstaller doesn't need Stuffit, but you'll need something that can
convert MacBinary, and I'm not sure if anything bundled with System 7 does that
(off a DOS formatted floppy, at that).
