You can do that today. The Shuck manual says:

For example, duplicate the TEXT and styl resources called "Normal" and name
the copies "Osaka". Then open the new styl resource, select the entire text
content and change the font to Osaka.  Select the two lines "Verbatim" and
"Code" and change the font to Osaka Tohaba at size 12. If you want Japanese
characters as a default, edit the "Normal" styl resource instead of
duplicating it.

I can mail you a modified copy of Shuck if necessary. Maybe Japanese pods
are common enough to warrant an additional "Osaka" menu item in the View
menu for the coming MacPerl release?
