I use a really cute piece of $20 shareware called Peek-a-Boo.  It has only 3 
priorities, though.  Try before you buy and see if you don't get hooked...  I like it 
because I don't feel like I'm operating "blind" any more regarding MacOS processes.  
It's somewhat like ps in unix.  Since I upgraded to a G4 I don't adjust process 
priorities the way I used to.  There are so many CPU cycles available, I don't fret 
about wasting them any more!

There is a competitor called something like "ProcessMonitor", but I can't find the URL 
just now.  It offers more control, but (IMO) a less attractive interface.
