The same ticket also mentions a possible solution: Building libiodbc without a gui, i.e. with --disable-gui should avoid the dependency on GTK. If you're interested in getting this resolved, please test whether libiodbc will build against gtk2 +quartz. Providing a patch that will make building with --disable-gui the default and moving the GUI and the GTK dependency to a variant also sounds like a good idea. Since libiodbc does have a maintainer, feel free to open a ticket and Cc him.
