Basically everything is possible. They are set using a platform
statement, documented in the guide [1].
platform os [version] [arch] {}
If you are on a darwin system, you should only find selected variants
darwin_* or macosx.
Most of these variants are listed in variant_descriptions.conf [2], but
this list is not meant to be complete.
