Ports doesn't know to stop/start services yet; it leaves that to
you, just
as you have to manually (or quasi-manually) add the appropriate
entries to
launchd. Stop it manually, start afterward (in test mode if
possible).
You might want to see what port upgrade would do and build (not
install) them before turning off services.
Depending on what will be upgraded your services could be offline for
a while otherwise.
Build, stop services, install and start services.
