Downgrading Software

Is it possible to downgrade software? I started to update GIMP, but  
am currently unable to use it because all the dependencies have been  
updated except for gegl and ffmpeg, which I am unable to upgrade.  I  
would like to downgrade back to the previous version of GIMP and its  
dependencies.  If possible, how would one go about doing this?
