I'm intrigued by your question as I haven't found a good one that was
open source.
I have used the sort of "freeware" yEd
https://www.yworks.com/products/yed . It's quite sophisticated and has
worked for nearly everything I needed to do.
Then there is Omnigraffle. Unfortunately it's not open source nor
inexpensive ... but it is very good.

What is a good alternative to 'dia'?
Open source, works on MacOS arm64, or comes native with MacOS.
Just want something very simple (elementary flowcharting).
