I can't find a way (xml grammar , ... ) like we can do with Textmate Edit Language under Xcode package, but i have not the time for now to dig more. Anyway i think you are right, outside Apple, we can not dot it. Of course, dvtcolorthemes is just fo specify colors for keys and what i search for is where/how we can map theses xml keys with language terms.
