John et al, I have this exact setup. The only challenge I've encountered in using google apps as my email server is when I'm trying to play fast and loose with email functionality on my site.
For instance, I have a script that forwards feedback, feature requests etc from my site to FogBugz - if the user enters an email address, I want the email to appear to be from them, not my administrative account. Google apps smtp is very strict (as it should be) about authenticating senders. My workaround was to setup exim on my linode box and use it exclusively to send email originating from my website.
