I don’t have a direct answer for you, but I know that VMWare Fusion does this 
in its VMs, as only OS X: Server is licensed for use in a virtual machine. If 
you search the web for how to get around their check, that’ll tell you how 
they’re doing it. IIRC, they look for the existence of some file that only 
exists on Server.
