If you're looking to have more control but take on some of the maintenance burden yourself, you might want to look at CoreNetworks ( http://www.corenetworks.net ). I've been using their cheapest dedicated server package for the last couple years ($29.95/month for your own dedicated server). It works out to a great value, as I get a lot more RAM, storage, and bandwidth than most VPS providers would give me for the money. They've had pretty good uptime as well. They're also willing to work with you on custom needs (I wanted to RAID1 the whole system, and they just charged me a 1-time fee for the extra hard drive).
It's definitely no-frills, and you have to know how to admin a Linux server just as you would with a VPS. That said, if you want complete control, it's a great value and you don't have to share a box with someone else. Hope that helps.
