I run my company as a hobby and as a sole-priporitorship.  When I setup my
iTunes Connect account, even as an individual, I was able to specify a
company name.  My applications are listed under the company name; the only
place my actual name appears is as the seller.

I'm no lawyer, but the decision to form an LLC or not is a question of
liability.  How much liability are you exposing yourself to by selling apps
on the App Store?  As far as I can tell, the answer is none.  All
applications are purchased under a blanket EULA that Apple provides.  Since
there is no real liability, I can't see the need to form an LLC.  If you
start doing some contract work and sell your services I could see you
forming an LLC at that point.
