Do you know, exactly, where you do this?

I got dragged into this saga in the first place because, when I 
went to set up my iTunes contracts, my name and legal name were 
pre-set to my personal name and there wasn't any interface to 
change them.

I didn't go any further, because the instructions say that your 
legal name is what will appear in the iTunes Store and you can't 
change it once you've set up your account. Which seems somewhat 
redundant, since there's no way of changing it before you set up 
your account either.
