Agreed. I thought about it, and yes, is better to fix it sooner than later.

I'm not comfortable with neither of two options.
The "blank document" is not an option because every new painting have
it associated source image.
On the other hand, while the only purpose of this software is to
create a painting from a digital photo, a user might not wan't to open
an image immediately, possibly he wan't to play with the style
settings, so I don't like the idea to force him to open an image.

Because a every new painting needs an original image to be
transformed. So opening an image is a way of create a new project.

I struggled a lot with it, it's an NSPanel with minimum and maximum
size set, the behaviour is strange. One possible solution is to make
the panel not resizable. I don't really like this option.

Yes, but you can change the built-in styles. You can change it
momentarily and discard the changes by not pressing the save button.

Agreed, the logic is somewhat inverted.
