No offense, but a user survey is no a good way to figure out what to develop. It's better to start with something you (or your friends & family) need but can't quite get on the Mac.
A saturated market is not necessarily a bad thing if you have a a way to make things better than existing solutions. Also, if you have a hobby beside programming, that's often a good first shot. Some examples: 1) Panic Coda -- Sure, there were other web development programs, but they wrote a Xcode/InterfaceBuilder for web sites. 2) Scrivener -- You can write for free using TextEdit, but they focus on gathering + writing which is something most writers need to do. 3) Acorn -- Image editors are a dime-a-dozen, but none used the source list UI to do everything and reduce the learning curve.
