At this point I'm using a pre-built 2.6.16 from April 2006. I haven't
really looked into what patches one needs and getting all the
hardware working and so on. (There certainly are a lot of people that
know this stuff better than me, so I tend to focus on the EFI side of
things where I can make a difference.)

My test machine is a first generation iMac 17" Core Duo. It's one of
the machines Apple handed out to replace the Developer Transition
Systems, in case you're wondering. I've also got an early-2006 MBP,
but that's my main machine, so I prefer to keep it running with Mac
OS X and use Parallels to run other OSes if needed. (When doing rEFIt
development, I use Xcode on the MBP to edit the code, compile it
using Visual Studio in a WinXP virtual machine, then copy the
binaries to the iMac and reboot it. That's remarkably productive.)
