The legacy bios emulation seems to freeze when probing for a monitor (if it 
gets no response).

Unless it's fixed in the latest firmware, I can only suggest you use EFI.

I sent my mac mini off to sit in a rack in london, only to realise it froze on 
reboot. The monitor problem! I paid the hosting company to reconfigure it to 
efi boot and problem solved.
