So apparently the problem I’m having is well-documented.  Apple seems to think 
it’s fine to ship out HomePods with old software that cannot then be updated, 
because they can’t connect to the home network.  GRRRRRRRRRRR.

I read an article suggesting that you can update a HomePod in this situation by 
connecting it to your Mac via USB, and then accessing it either via Find or 
iTunes and Clicking Restore.  I tried that, but I can’t see the device in 
either iTunes or Finder.  Anyone know how to do this?
