As you probably now know, VLC Media Player did the conversion just
fine. One file that was almost 1.5 gigs is now just under 50 megs. All
is good.

Since an M4B file is simply an MPEG4 container with AAC audio data and chapter metadata
atoms, you probably *could* use the conversion tool of the Music app for this, actually,
but it's not intuitive. Try renaming your m4b file to have an extension of m4a, then open
it in Music (which should be associated already to this file type). You can check that it
will play beforehand by previewing it with QuickLook (press Space on the file in Finder).
Once it's in your library you can then convert to MP3 or whatever by the usual method:
configure your audio import settings in the Settings panel, then use the "Create …
Version" menu command in the File menu. Of course, the usual caveat about converting
between lossy formats applies, namely, don't do it if you value quality, but instead just
find a way to play the original.
Of course, this doesn't work if your audiobook is protected and purchased from
the iTunes Audiobooks Store. But you knew that already.
