You can find more information from the sources Alex recommended and especially podcasts discussing the iPhone. You can easily reinstall Leopard and soon to be released Snow Leopard. In fact it is easier than Linux or windows for that matter. I have reinstalled on many occasions Mac OS X starting with Tiger. What you know about windows will have to be set aside to some degree when learning the Mac and VoiceOver. Once you get used to VoiceOver, I think you will find it more than enough to meet your needs. In fact you will have no need for Orca.
