Yes you can do exactly that. once the dvd is inserted and mounted it will open a window which has an icon "install OS X" open this and you will be asked for your administrators password. Enter it and hit ok and your mac will restart and boot from the dvd without user intervention. Just a quick note on the install side of things too. You can reduce the size of the install by not installing printer drivers you dont have and also languages you dont need as well. this is an options button (i forget where in the process ) I think just before or during the choice of install location.
