There might be a slick software way to do this but for me I just use an 
external mixer. I can run all my inputs into there, mix the levels the 
way I want and then record the final output on the Mac. That also means 
that I can't go back and fix things easily since its not separate 
tracks, but most of my stuff is quick and dirty demos to developers 
showing accessibility bugs in their products. A simple 4-channel Mackie 
with both Mic and line-level inputs is about $100. I then hook up a 
basic Sure SM58 for voice. Huge difference in the quality of the spoken 
tracks. Just depends on how far into this you want to get :)
