Yes you can and in fact we use Macs here all the time to do just that. The best way is to use OpenOffice with the odt2dtbook plugin. That will export a DTBook XML file which can be used with the Daisy Pipeline software to generate the finished book. The next release of the plugin will eliminate the need to use DAISY Pipeline and will export a finished DAISY book.
