Way back in the Mac II days, one could run the server edition of the OS (it was pretty cheap, only a few bucks more than the regular OS) and it would boot without a keyboard, mouse or monitor. I don't under the OSX fixation with monitors but I'm not a hardware/firmware hacker either so I'm not supposed to know this stuff.
