Christina, This happens whenever Mail encounters dates or email addresses, so you can add them to either ICal or address book. It's just a way to have that particular data pasteD into a new entry so you don't have to type it in yourself. I'm not sure there is a way to turn that announcement off, but it's rather nice to have around.
