James, in system preferences under keyboard and mouse tab, there are shortcut keys that would allow you to change keyboard layouts. I think the "previous keyboard layout" is command + spacebar and "next keyboard layout" is option+spacebar. I can never quite remember whether it is this way round so please check in the table of assigned shortcut keys wehre you can also change the shortcut keys to suit you. Also, I seem to think you have to add the keyboards you want to the menu on the menu bar where you can select your keyboard manually by pressing control+f8 and arrowing left to input menu.
