Hi Mark, I use TextEdit and TeXShop. I've started using Pages, but that's mostly because other people have started asking questions about how to use features under Pages. TeX is probably serious overkill for most users and has a steep initial learning curve. It was developed to offset the high cost of publishing mathematics texts, so you can design and control the layout of publication quality documents, and is available free, and cross-platform, with multi-language support and spell-checking. TeXShop is the GUI-based interface. James has used this package, as has Greg Kearney.
