Interestingly, I actually find these types of files more accessible in Pages, 
at least more accessible than MS Word 2010 on Windows.

Yes, essentially you just type your answer in the corresponding blank cell. The 
only thing to be careful of is where some cells are merged, and to distinguish 
between headers and things that actually require responses. The best way to 
figure out these these things is to navigate in the table with only the arrow 
keys (not with the VO keys).
