To change the settings on misspelt go to Voiceover Utility and then verbosity and then text and then you can there determine the behaviour of Voiceover when it encounters a misspelt word. In relation to expanding and collapsing with arrow keys have you remembered to turn Quick Nav of? I have never seen the finder behaviour you describe so cannot help with that one.
