Ordinarily, I'd tell you to switch to Classic View, in which you can sort the headers of the table manually. I did this in Mavericks, and while you do lose the message preview from Standard View, you *can* set the subject to be read first if you want.
In 10.10.0, however, there's a bug where VoiceOver says "conversation, collapsed disclosure triangle" before every message. This happens even if a message is not part of a thread, and is an even bigger hit to efficiency than the string of sender names. Until it gets fixed, I would steer clear of Classic View.
