This took me a long time to figure out and I had to finally call apple  
about it because it wasn't working for me, smile.

But when you go into ITunes hopefully it won't start syncing right  
away.  Go under the settings where everything is that you want it to  
sync and make sure you check them.  Also under that is a section that  
ask if you want things to change for the next sync, make sure all of  
those boxes are not checked or it will change it to match the mac.   
Once you press enter on apply it will ask or should ask if you want to  
replace merge or cancel, press enter on merge and it will keep  
everything that's on your IPhone except the ringtones won't copy to  
the computer.  I haven't figured out how to get it to do that part yet.
