When you add to library, iTunes places your music in folders under Music > 
iTunes > iTunes Media according to artist and that's where you should find 
them. You can't just move your folders intact the way you have them into 
iTunes. Also, adding to library doesn't erase the folder and files from their 
original location so they are still there. I'm not sure if this answers your 
question or not.

As far as the trackpad goes, you can't turn it off but make sure you have 
trackpad commander disabled in Voiceover Utility; then it shouldn't be as much 
of a problem. Another partial solution is to get a magic ttrackpad; when that 
is in use, I believe this disables the built-in one.
