In order to work with a single channel on the stereo track, I have always done 
a split stereo to mono tracks command and then worked with the individual 
tracks. Then you can recombined the monos into a single stereo. As far as 
selecting individual channels on a single stereo track, I think that 
up-and-down arrows will do that but careful, you can get into some really 
strange situations and you won't be able to know what selected.
