1. That's a Yosemite bug I keep hoping will be fixed in an incremental update. So far, though, no luck. You could always put your cursor on the file and use the context menu (vo-shift-m) to Quick Look it. In that window you can see the name and content.
2. Yes, but it's a bit tricky. Once you choose the address, interact, then hit vo-left to get to the start. Press vo-shift-m and, if you've done it right, you'll get a popup menu where you can edit the address, choose a different one for that contact, and so on. The first item in that menu is the selected email address, which you can spell with vo-w-w. If no menu appears, you may have interacted once too many times, or you might not be at the start of the name. As I said, it's a bit tricky.
