OK. Regarding ITunes:
When you are looking at the list of all your podcasts, there should be a
settings button just past all of the podcast titles. If you go into
settings, there should be a popup button to either choose a specific one of
those podcasts, or a default option. In here, you should be able to set
that popup to default, then configure your update settings accordingly. I
wonder if perhaps something in there might not be configured to your liking.

Podcasts can be a little tricky with ITunes to get configured correctly, but
once you do so, they actually work really really really well.
