You can also find that in the Info box (command-I) on any file. After all the usual stuff about size and name will be the Open With menu where you can change to whatever app you want for that file. Just after that will be a Change All button which will make all other files of that type open with the selected app. The contextual menu might be a bit easier to navigate but I remember this one easier.
